Dehydrated potatoes are whole, raw potatoes that have been cooked and properly processed to remove almost all their water content, creating a lightweight, shelf-stable, healthy potato product that can be easily rehydrated by adding water and used as mashed potatoes or added to soups, stews, casseroles, and sauces.  


Dehydrated potatoes are excellent for long-term food storage, lasting months at room temperature. 

1752's Dehydrated Potato project offers a solution to the crisis facing Atlantic potato growers.

Farmers in Prince Edward Island and Nova Scotia are currently facing a crisis that threatens their livelihoods and regional food security, not only from drought and environmental impact caused by climate change, but also the US Tariffs that impact market sales and delivery. The combined effect has left hundreds of family-run farms and agricultural workers in Atlantic Canada stressed and searching for sustainable market alternatives for their surplus and vulnerable potato crops.


Using a patented Canadian advanced dehydration technology, 1752 processes potatoes typically deemed unsellable such as "ugly" and misshapen potatoes, turning them into high-quality, shelf-stable products including nutrient-dense powders, cubes, and healthy snacks, recovering value from crops that would typically be lost. This not only reduces food waste but also provides farmers with an alternative revenue stream, strengthening regional agricultural resilience, aligning with the goals of the Atlantic Canada Opportunity Agency (ACOA) for agricultural innovation, sustainability, and economic resilience.


1752's dehydrated potato project is supported by the Minister of Agriculture in recognition of the significant value it offers to both the provincial economy and Indigenous communities locally and across Canada.
